Carlos
- Style: Dry Muscadine White

Made from Georgia’s native Carlos Muscadine, this wine challenges everything you thought you knew about Muscadine. Forget sweet and syrupy, Our Carlos is elegantly dry with distinctive citrus character that rivals premium white wines from anywhere.

Chardonnay
- Style: Light, Elegant White Tasting Notes: Crisp, clean texture with fresh apple notes and balanced acidity Character: Approachable, food-friendly, unoaked
Our Chardonnay is crafted with a Southern sensibility, sourced from local vineyards to bring you a wine that’s slightly lighter in body, perfect for warm-weather sipping and regional cuisine. With no oak aging, the natural character of the fruit shines through for a pure, refreshing experience in every glass.

Traminette
- Style: Floral Aromatic White

Intensely aromatic with notes of lychee, rose petal, and ginger spice, Traminette is a wine that surprises people. Created by crossing Gewürztraminer with a hardy American variety, it brings all the exotic character of its parent with added resilience for our climate.

- Why You’ll Love It: If you love Gewürztraminer or aromatic wines, Traminette delivers that perfumed intensity with balanced sweetness.

Lenoir
- Style: Rustic, Full-Bodied Red
- Tasting Notes: Blackberry hints, earthy undertones, robust structure

Also known as Black Spanish or Jacquez, Lenoir is one of the oldest American grape varieties still in production it grown in Texas and the South since the 1800s. This is a wine with history and character, offering a more rustic, “wild” profile than European reds.

Norton

Often called “America’s grape,” Norton has been producing exceptional red wines for over 200 years. Thomas Jefferson himself attempted to grow it at Monticello. Our Norton showcases why this variety has endured & structured enough to age beautifully, smooth enough to enjoy young, and utterly unique in character.

Pinot Noir

Our Pinot Noir is sourced from the renowned vineyards of Washington State, where the cool climate and volcanic soils bring out the best in this beloved variety- bright red fruit, a silky texture, and the kind of food-friendly versatility that makes it perfect for any occasion.
- Perfect With: Grilled salmon, mushroom pizza, roasted vegetables, soft cheeses Why You’ll Love It: Classic Pinot Noir character from one of America’s premier wine regions that is light enough for warm weather, complex enough for serious wine drinkers.

Rosé
- Style: Crisp, Light, Refreshing
- Tasting Notes: Strawberry and watermelon hints, bright acidity
- Character: Perfect porch-sipper, dry with fruit-forward appeal
Our Rosé captures everything we love about warm-weather wine drinking. It’s refreshing, food-friendly, and dangerously easy to drink on a sunny afternoon at the Pavilion.
- Perfect With: Anything from the Embers pizza truck, fresh salads, goat cheese, summer vegetables, brunch
- Why You’ll Love It: Rosé all day. This is the wine that pairs with everything and never gets boring.

Moonwobble
Chardonnay base with Vidal Blanc and a touch of Granny Vale. Adventuresome patio wine with notes of ripe apples, pineapple and lychee. Pair with semi-soft cheeses, an apple slaw or even curry dishes. Serve slightly chilled. LIMITED EDITION ECLIPSE WINE. Moonwobbe is a fanciful name (we made it up!) with a nod to the eclipse.

Saros
Super blend of Norton, Pinot, Petite Verdot and Chambourcin, this nouveau inspired wine has a fresh, youthful feel of darker fruits such as plum and black cherry with a lingering finish. Pair with single cream brie or even a gorgonzola to bring out the subtle, spicy undertones. Serve cool.
LIMITED EDITION ECLIPSE WINE. Saros (NOT SOROS) is the term for the cycle of the eclipse.

Mercy
This lovely blend of classic Bordeaux varieties, Petit Verdot and Malbec has evoked spiritual outbursts among us. In a French style, the wine is lean with the perfect balance of earth and fruit. It’s complex while maintaining versatility that pairs with an assortment of dishes from beef jerky to filet mignon, lasagna to your favorite pizza. Mercy!

Malbec
An incredible expression of the variety, our Malbec stands among the Gods of Malbec-ery. On the nose are notes of ripe blueberry, blackberry compote and sweet cream. The depth goes on for days with dark black fruits and round creamy undertones on the palate. Pairs with smoked meats and deep contemplation.

Sparkling Chardonnay
Made to mark our 1-year anniversary of Doghobble Wine Farm! In early French winemaking- what started as an accident, led to the discovery of sparkling wine whereby the fermentation finishes in the bottle. This traps the naturally occurring CO2 which in turn, dissolves in the liquid creating delicate, tiny bubbles.
Our Chardonnay grapes are picked early on the Dahlonega Plateau AVA to ensure the perfect balance of fruit and acidity for our sparkling wines. On the nose is a slight hint of pastry bread and baked apple while on the palate are lively bubbles followed by fresh bread, lemon zest and crisp apple.

Why These Grapes?
You might notice our wine list looks different from typical wineries. That’s intentional.
We grow indigenous and French-American hybrid grapes & varieties specifically bred to thrive in challenging climates like ours. While traditional European grapes (Cabernet, Chardonnay, etc.) struggle with Pierce’s Disease, high humidity, and temperature extremes in North Georgia, our grapes flourish naturally.
What This Means for You:
- More sustainable farming – Disease-resistant grapes need fewer chemical inputs
- True terroir expression – Healthy, thriving vines produce wines that honestly reflect our place
- Unique flavors – These aren’t “substitute” grapes, they’re distinctive varieties with their own character
